Baked oatmeal is one of my family’s favorite breakfasts to make for special occasions. We love it for weekends when we have family staying at our house from out of town, Christmas morning, or any other special day. It can be mixed up the night before and put in the fridge, ready to pop into the oven when you wake up.
It’s also incredibly simple to make and easy to customize with what ingredients you have on hand! It’s packed with healthy fats and doesn’t use refined sugar.
Ingredients
- 6 cups rolled oats
- 3 cups coconut milk (or any kind of milk)
- 1/4 cup melted coconut oil (could also use butter)
- 2 cups water
- 2 eggs
- 1 cup maple syrup (or 3/4 cup coconut sugar)
- 2tsp cinnamon
- 2 Tbsp vanilla
- 2-3 bananas
- 1-2 cups frozen fruit
- Optional: 1 cup coconut flakes; 1/3 cup chia seeds
Recipe
- Slice bananas and lay them on the bottom of a 9×13 pan
- Mix dry ingredients (oats, cinnamon, coconut flakes, chia seeds)
- Mix wet ingredients (coconut milk, coconut oil, water, eggs, maple syrup, vanilla
- Add in frozen fruit – we prefer blueberries or cherries
- Add more liquid if your batter feels a little too dry – it should be moist, but not too watery or dry.
*If you make this the night before, add slightly more liquid, as it will absorb more liquid as it sits in the fridge overnight*
6. Bake at 350F for 45-50 minutes (or until it is thoroughly cooked through)
This recipe is really flexible – you can easily make it with different fruit, add in chocolate chips for a treat, top it with fruit instead of putting the fruit inside, top it with a crunchy nut, etc. Use the ingredients you have in your kitchen and the things your family loves to eat!
