Mmmm Muffins!

I have one of the pickiest eaters ever. in. life. in my house.  Mealtime is one of my most frustrating parenting times of the day, when my one-year-old turns up his nose at all the veggies and real foods I’m offering and won’t eat anything but crackers.

So, when I come across a yummy recipe that is packed full of good-for-you goodness, I jump on it.  This recipe for Banana, Zucchini, and Summer Squash Muffins from Heather is oh so delicious and filled with real foods that my little man normally won’t touch.

My three-year-old, on the other hand, will eat just about anything.  He mixed all the veggies in and was so excited to eat these, he could barely wait the 30 minutes they were in the oven.

But they were well worth the wait – and get the picky eater stamp of approval!  He actually cried when I wouldn’t let him eat more than one at snack time.
